Flower Farming Basics

Alright, welcome to the flower farming track.

A lot of you guys probably know the some of the fisher clan, Luke and all of them.

They do produce and then I started doing flowers.

I actually went to school to be a veterinarian.

I did mostly breeding horses for the first like 3 years out of school and Then I had My oldest daughter she's 5 now And I realized that I wanted to be home more and I took her with me actually We would set the pack and play up everywhere we went in the barn.

But I had a big garden right next to our feed mill on our farm and I had a lot of people that would ask me to pick flowers out of my garden because no surprise, most of my garden was flowers instead of vegetables, much to my dad and husband's dismay.

But so I intentionally planned my first year to have it so that people could come and pick flowers and I planned it all out and that's what we did the first year my second year I wanted to go big and I decided I was going to sell wholesale and I Planned for that and that was 2020 and the florists were shut down.

So I started going to markets with Luke and Shante and just selling bouquets and I started a CSA, delivered all over our little town and then the next year I really expanded into florists and my CSA grew to my that next year I had like 40 people which is pretty good for our little town of Bristow which I don't know what the population, yeah, it was just flowers.

Yep, and I would set up with, how many of you guys know Lucan Chante?

I'm talking like you should know them, but they do a produce CSA, and we set up on Thursday evenings in our little town, just in the parking lot, and people come pick up their produce So they would pick up their flowers at that time too and we would set it up as a market you could stop and buy things as well So this is something I work a lot with our state the the agricultural people in our state that do agritourism and I work with about 15 different florists and stuff.

So this first class is something I'm kind of passionate about because I also manage our Oklahoma flower farmers group.

That's, I don't know if I said that, we're from Oklahoma.

And it seems like every day I get a new request to join as a flower farmer.

And So we really push this starting with the basics.

So how many of you already have a farm and you grow flowers and sell flowers?

How many of you grow produce or have like a produce CSA or like okay just for yourselves, okay, okay, very good, so This is going to be really How I encourage people to start their flower farm You can do it without breaking the bank.

You don't have to start by buying thousands of dollars worth of Dahlia tubers That's something that I I'll try not get on my soapbox, but it's you don't have to start I didn't I started with sunflowers like I said zinnias in my backyard And you can definitely do it because those are honestly my forest favorite flowers, so Let's go ahead and get get started here So to get started I encourage everyone to take stock of what you have.

Do you have land that's already being farmed?

Because that will tell you some different flowers that you would grow Most flowers especially to start with and honestly most flowers Want full Sun so 6 to 8 hours more on the 8 hour end is going to be ideal and Once you kind of pick a spot Getting a soil test is the next big step you can go Through your County agency a lot of them will do it for free unless you just really want a lot of details But you can get the basics For free I worked with like about 5 different counties around us and they're all free And they'll give you all the supplies and everything Like I said, that's not going to give like super detailed, but it'll give you your nitrogen at least and so you'll kind of ignite your big 3.

Whoops, then take stock of do you already have seeds?

Do you already have a stock of sunflower seeds that you keep thinking about wanting to plant?

I'm from Oklahoma and for some reason we all say zinnias.

So the next 1, what kind of tools do you have?

You can grow a lot of flowers on a very small space and we'll talk about that, but I plant things very close together and so I plant about 1, 200 sunflowers a week and that's like a About an 80 foot 3 by 80 foot row so but that's a lot of sunflowers you definitely don't need to start there so you can start with just a little walk behind I can't even think what they're called but Taylor there we go this I put this picture up here and you don't even have to tilt I put this picture up here and you don't even have to till, but I put this picture up here because I now have a small little John Deere tractor, but this tractor is what we started with.

My dad Farms and so we have big tractors and so all my rows got set up like really far apart Because I had to make room for the big tractor to get through as you can tell by the little tiller on the back of the tractor so You don't even Have to till you can do no till that's another Big thing you can start by just cover cropping and doing no till your first year But just taking stock of what you have just you can start with a shovel and a hoe that's really all you need And do you already have customers?

I kind of already asked you guys this but if you already have a market that you attend Or if you're wanting to do wholesale Reaching out to to your forest in your area.

So just taking stock of what you already have So this is kind of your next questions to ask.

Do you want to attend a market every week?

Do you have, do you live on a road that's a busy street that you could put up a little stand by your driveway and just sell bouquets from your from your farm or do you want to reach out into the wholesale market?

They the wholesale just keeps getting harder and harder for them to get good flowers from the wholesale markets, especially in our area.

I know some of you were like from everywhere, but in Oklahoma, I mean they're shipping those flowers a long ways and so they're not very fresh and So they will take anything that we can give them So once you kind of decide your customer that will also decide help you decide what to grow and we're gonna I'm gonna look at both sides of the either both retail market bouquets and wholesale It's really similar, but you might choose a little different colors and then we'll talk about how how to grow each of these things.

So These are your different customers Another option for wholesale is bulk grocery store bunches, which is a really great opportunity as well.

I have a friend that she takes like a hundred brocades a week to research in Oklahoma and they just distribute so and then retail There's also different like I was talking about you can do a farmer's market.

You can do a roadside stand you can do a DIY buckets are really popular with brides right now or you can set up a CSA where you deliver or they come and pick up each week And then the other 1 that we're not really going to talk about right now because I have a whole class on this is you pick And that's we'll talk about that.

The last class is all about agritourism Okay, so what to grow and these are what I would encourage for your first season If you're doing wholesale and it like I said, it's going to be really similar.

We'll talk about numbers a little bit later, but there's just no comparison.

Sunflowers, zinnias, Marigolds, which is 1 that I don't think a lot of people think about but that was my top seller this year surprisingly Yes, the giant tall marigolds They are becoming really popular and people love the smell.

I do not like the smell but you get used to it if you're selling them let me tell you.

Celosia, Cosmos is also really popular and we're not going to talk a lot about hardy annuals because in your first season it seems like a lot of people, it's easiest to start with just summer flowers.

Hardy annuals is some things that you would plant in the fall and have for spring.

And then as you get more experienced, adding the dahlias, lysanthus is a huge 1, ranunculus, tulips.

There's so many beautiful flowers, but don't get sucked into all of the all the extra things yet.

So for wholesale a Lot of the florists that like to have local flowers are very artistic and they do a lot of weddings and the Local flowers are ones that maybe don't ship as well.

So Xenias they don't ship well, They cannot actually get them from the wholesaler, really.

This is just kind of like a few buckets that I had put together for 1 of my florists was having a wedding.

They really like like peachy, corally colors and pinks, soft pinks, no bright colors, no none of the like Crayola colors.

I have 1 florist and she does a lot of funerals and so she will take a lot.

They don't even I have like half my florist really love sunflowers and then the other half don't really use them except we'll talk about there's white Sunflowers and that's they love those so they do get a little more colorful during the summer And like I said, I started growing marigolds and they love the marigolds Retail is going to be your same list except I add basil because you kind of need a greenery And as you get experience adding things, Dahlias is maybe not the best retail option.

They don't have a long base life, so it's really going to be about educating your customer.

Some people still love them, but Really just the big Sunflowers and zinnias, that's what people want like farmers market They every when I when I do the market I always will put together a bouquet like this and then I always put a few that's like flowers like these colors and these are always the last ones to go if they sell at all which is surprising to me because I love them but people especially during the summer they want bright colors.

Okay so this is the colors for the pinks and bright purples and sunflowers.

I can, I'll give them my slides so you guys don't have to worry about I just was late Okay, so here's we're gonna break down the different though different flowers so sunflowers I start these in March in 128 trays I do 1 seed per cell and you want to start them about 2 to 3 weeks before you're ready to plant them out.

So this is going to depend on your last frost date.

Our last frost date is April 19 and sunflowers are actually a little bit frost tolerant so I will put them out early like the 1st of April trying to get sunflowers for Mother's Day is usually my goal And if it's really gonna get really cold, I'll put a frost cloth over them, but they are somewhat frost tolerant.

So all my early plantings I start in trays, I put them out about 2 to 3 weeks after starting them and I space them 6 inches apart and that gives you a really nice sized flower.

They're much easier to put in bouquets and that's why florists love them.

They can't hardly get a good size sunflower from the wholesaler.

They're either like huge and really hard to put in to arrangements or they're super super tiny which they do like those but so like these you can kind of see the size of those they're similar to a size of like a large Xenia and So I space about 6 inches You can see like the different successions here in in my picture.

I start new trays And like I said, I started about 1200 a week That's about half of them or the original color and then about half are the whites that will look out here in just a minute I go on I Grow I have about an acre And then I this this this last fall I got the grant for an aqueous tunnel And so I have a 30 by 96 tunnel as well now, so But total it's like a little over an acre with my new tunnel and stuff Okay, so you can also direct seed sunflowers They do really well in our area direct seeded because it's so warm But I don't start doing that until like June and I plant sunflowers Every week until the end of August and I will have sunflowers basically Until it's usually like mid to end of October But like I said we we have a very long growing season.

I honestly don't do a lot of direct seeding because I want to make sure that I have every sunflower that I need and you run a lot more risk of birds eating your seed or not getting enough rain or not watering them enough not getting them to sprout.

When I start them in trays I know that they're all there.

I'm not going to have like a bunch of different sizes because sunflowers, that's why I say 6 inch spacing.

If you space them about a foot apart that's how you get bigger flowers.

So if you like bigger flowers then space them 8 to 12 inches apart.

You can also space them 4 inches apart, and they're like a really nice, cute little size.

Dahlias: From Tuber to Bloom

Okay, we're gonna go ahead and get started.

We're going to talk a little bit about everything from tuber to bloom.

We lost a few, but this is a little more in-depth.

This is the the next step, I guess you would say, to what I would suggest you start growing because dahlias are the next big thing that forests want.

The problem with dahlias is they have a short base life, so they really are more of an event flower.

You can put them in retail bouquets, but you have to be careful with what you choose, and We'll talk about that a little bit more.

So I've had some really good, good years with dahlias.

This last year, they talked to me about doing this class, and I was going to take all these pictures and everything.

And then we had a huge drought in Oklahoma.

So I had to really dig in the dig in the archives, but So I'm going to talk to you a little a few things that I learned from that and Some advice if you are and more in the south or in a hot area.

So, we'll talk about the customer, your varieties and sourcing, growing, harvesting, selling, and then of course the digging, dividing, and storing.

And I have a little bit of a different input on that.

I don't actually dig my dahlias in Divide.

OK, so for your customer, wholesale, they want white, like so much white.

Because white, the bugs also really love the white dais but That's what they want Weddings big weddings.

I mean there are so many weddings that all they have is white and it's like why?

But another 1 is blush and peach just those really muted tones.

We aren't going to get too much into this.

The cafe au lait is really popular not as much it's it's fading in popularity in my area at least thankfully, but Yeah, so But then if you if you are wanting to add them to your market bouquets, which is definitely doable Using the more ball type varieties which we can talk about different The names of all of them.

There's thousands of different dahlias But they like a little more colorful.

They do actually still like these muted tones more with the dahlias So, yeah, there's different different forms I'll go ahead and tell you a couple of my favorite favorite varieties for florists Oh Okay so for white my favorite is Blizzard.

It's like the only white to grow in my opinion.

It you can cut the blooms a little bit early they'll still open up which is not true for a lot of dahlias.

It has a bit more of an ivory tone which they really like and it's called blizzard.

Yep all Dahlias have a name which is really interesting that other dahlia in this picture.

That's not white It's called caramel corn, which is another 1 of my favorites.

That's the other thing about blizzard There's other good whites.

I'm not saying that by any means But they don't all do well in the heat that we have here.

But blizzard, man, even this summer, it was like the only dahlia I had blooming for a while.

So yeah, and caramel corn's the same way.

It gets huge, it crinks out tons of blooms.

The bugs don't really care about it for some reason.

It's really interesting once you start growing dahlias and like you can kind of pick out the different ones that do well in your area.

So it's really a lot of trial and error like some of them I've grown and I just throw the tubers away It's not even worth it Let's see some of the other my favorites in this picture, this is peaches and cream, which is the big 1 that everybody wants and there's a bit of a disclaimer for that 1.

It does, it's beautiful, it it's my favorite but it has like a really good flush and Then it stops blooming like practically all summer and then in the fall.

It'll have another flush, which is not ideal for Turning a profit necessarily, but it's everyone's favorite.

I'll continue to grow it And it's a shorter plant so you have to really cut deep which we'll talk about that as well.

I was trying to see if there's I have like a whole list of all my favorites but we can talk about that if we have time at the end.

Places to source them, My favorite place to get dahlias is actually called Swan Island dahlias and They still have good varieties left.

There's a dahlia craze Happening in America right now like they're making a huge comeback.

They used to be super like an old-school flower.

Nobody wanted them And so it is very challenging to get the varieties you want.

It's wild Especially if you Don't want to buy them on Sabbath It's like a whole nother thing because a lot of their sales are on Saturdays And if you're not there at 10 a.m..

When they open their website, they're gone within like 5 minutes, so yeah, it's wild So the small farms if you want if that's how you want to go which I encourage you to do that you just have to really follow them on their social media be ready and Choose like 1 tuber that you want from their farm and or else your cart will be empty when you go to check out.

But Swan Island is a big producer up in the Pacific Northwest.

You can get them early, shipped to you early, so you can take cuttings and multiply your stock which we'll talk about doing that.

The other small farm that I get from is called Arrowhead Farms.

They've already had their sale for this year but they will ship to me early and so I can take cuttings from some of them more like rare varieties but then you can also get them wholesale if you're truly interested in growing these for like a profit You either need to take cuttings to multiply your stock to get more to more plants quickly or try wholesale.

You do risk virus but we're finding that even in small farms there's virus present everywhere in your dahlias.

But you can get wholesale tuber they come in a small clump and They're generally about 250 a clump.

So like Blizzard is I can get wholesale you have to get 25 Usually it's usually about 250 a clump if I were to get blizzard from Arrowhead or wherever it's about $8 a tuber so it's it's significantly different and it's getting worse like It's it's crazy that just from when I started the amount that tubers have gone up is just it's wild Oh, yes, so the wholesale source is Ball Color Link is where I get all my wholesale ones.

It's That's the main wholesaler for flower supplies now.

Hopefully this is not messing up their recording.

So tubers, We're going to start talking about tubers.

These are all what it's this is what a tuber looks like kind of like a potato You actually can eat them they're edible, but They come in all different sizes different varieties will have different sizes These are divided tubers.

So if you order a tuber from a farm this is what you're going to get.

The plant comes from the crown which unless I don't think I could it's Like this end here and then there's the neck and the tuber you need to have all parts to produce a plant There's a really great resource on summer dreams farm which you can actually buy dyes From them as well sometimes he will do some bulk sales, but they're still fairly expensive they have great tubers as well They're a smaller farm, but he has a whole blog post on dividing Dahlia tubers I Decided not to get too much into dividing them because that's a very like it I feel like it's just you need to do it and get hands-on and I was gonna take some pictures this year But I didn't get to do that So but he has like step by step by step and we'll talk we will talk about some of the points but just jot that down you can look on his blog if you're if you're ready to divide your own.

Full Sun I'm going to give a disclaimer with that.

If you're in the south, I am finding that you do not want full sun.

You do, but you really need some like a shade structure or something in in the heat of the summer.

If it gets over, I read an article, if it gets over like 92 degrees they basically shut down and it's hard to get them going back again.

So a lot of people, larger growers in the south, will build shade structures over their over their dahlia rows, which is basically like building a Tunnel and putting shade cloth on it instead of plastic The biggest thing is these plants get huge so you really do it does have to be some like a caterpillar tunnel And you still need good airflow and so dahlias are just a real diva in the south especially This is kind of I put up here just like the textbook of how people tell you to plant dahlias.

Floret is the number 1 that has the how to do it, but she puts a layer of compost and a lot of people will do that.

Put a layer of compost on your bed, dig a hole 4 to 6 inches deep once the soil is warm, put your tuber in with with the eyes facing up and let it grow.

Don't water it until you see growth because you can rot your tubers.

So that's kind of like how you're supposed to do it.

She also says I believe 12 inches apart is how she does how far apart she does hers and really all of them there are so many if you Google how to plant dahlias or how to grow dahlias there are so many resources nowadays so I I Just kind of decided that I'm going to kind of tell you what I do It's a little bit different, but it's what I found that works when I plant my first year I planted in Fabric wheat for weed control it worked actually really well.

It was a pain to plant into And then I put like straw over it to keep it cooler But and I did the 12-inch spacing and stuff It was too far apart they there was a lot of empty space which I don't like It's just wasted.

So now what I do is I dig a trench and I'll go through and lay my dahlias about, I do do them about 9 inches apart.

And I should say I did this, I haven't dug my dahlias the last few years because we can overwinter them But dig a long trench just lay your dahlias about however far apart You want to put them as long as you have good air flow you can pack them in there They don't get near as big here as they do in the Pacific Northwest as well as either.

So again it's your growing zone it's really a lot of trial and error but I'll lay the dahlias and then we'll cover cover them.

I put a row of drip tape for each trench basically, each row, and I do 2 rows per bed.

And it's, my dahlia beds are probably closer to 30 inches.

They're a little more narrow because I do them about the about the rows about a foot apart in the bed for a little bit more space.

So again your spacing is kind of going to be dependent.

That's the only thing I don't do 6 inches apart.

But another way for weed control is just mulching them or just keep staying ahead of the weeds I guess but Another note I was going to say that I do a little bit differently I do not add compost my first year I was like everyone says you got to have compost for everything you got to put compost on every bed that you start That gets really expensive if you've ever purchased compost.

Heirloom Chrysanthemums and Peonies

Okay, we'll go ahead and get started because it is a little it's past 245.

I think most of you were here this morning, but my name is Allison Fisher Lambert.

I have a flower farm near Bristow Oklahoma slick chick blooms I didn't tell people that before but that's the name of my flower farm you can find us on Instagram or Facebook and I sell a lot to florists in the Tulsa, Oklahoma area, and then I have a bouquet CSA and We do some agritourism type stuff on our farm as well, so we'll talk about that at our next class, but this class is about peonies and heirloom chrysanthemums I won't say heirloom chrysanthemums every time that's a mouthful so we'll just call them mums and I'm going to try to remember to say peonies because I always say peonies because I guess I'm from the South but But that'll be a pretty quick thing but these are flowers that bloom in the shoulder seasons.

We talked about this a little bit earlier in 1 of our classes with hardy annuals.

So they, peonies bloom early in this, earlier in the spring and then the mums are in the fall, basically after your dahlias, really.

And that's the busiest time for event forests, especially.

In the summer, their business really peters off, as well as, even if you're doing bouquets and stuff Things just really slow down people are on vacation.

Their kids are out of school Most weddings and stuff are either in the spring or the fall so with flower farming my goal is to really get to where I'm only growing in the shoulder seasons and I can kind of not be growing when it's 110 degrees out.

We talked about Oklahoma is just really hot.

I realize not everybody's in Oklahoma, but so these are ideal for that.

Hardy annuals we talked about earlier, and there's a lot of perennials, Which is something that I'm working on building up in my farm we don't have time to talk about all those but we're going to talk about the peonies peonies and The moms are actually a perennial in in our zone and area Okay, so Peonies are they worth the investment?

I would definitely say say yes I have been just putting in when you buy wholesale they come in bags of about 25 I believe is what it is so I put in like 50 or so every year and depending on the variety there are 4 or 5 dollars apiece for your bare roots but each stem when you sell to a florist or even retail a just a basic peony to a forest the lowest I've sold them is 5 dollars stem so they are for sure they quickly make up what you invest there and And it's a pretty quick turnaround which we'll talk about here in a little bit You just basically just need a full Sun location with some fairly good drainage because you don't want your roots to rot and I put up there cold a cold period they actually do best in Alaska They need a certain amount of cold, but there are varieties that we can grow in the south and If you're up further north, then you can grow a lot different varieties and wider variety but there's ones that do great here as well.

So you plant bare roots in the fall you have to order early spring.

I actually just got an email on the way down here asking what my order was for next for next spring our next fall like to order yeah and tulips are the same way it's wild so you order early spring or they will all be gone if you're ordering from a wholesaler You can order online and things like that, just 1 or 2, but it's the most economical way is to plant bare roots in the fall.

You can get potted plants in your nurseries and stuff in the spring, but that's not necessarily the most economical way if you're really trying to turn this into your your farm.

So they come as bare roots and they're they almost kind of look like dahlia tubers they're just kind of sticky wild looking things and this is pretty much across the board what all farms that I have found this is how they plant them it's worked well for me as well.

There's 2 rows per bed The rows in the bed are 18 inches apart and then you plant the roots 24 inches apart in the row.

And you do it in a zigzag pattern so they're spread out.

My plan is, and this is also a pretty common practice is We play it in landscape fabric And then I'm going to leave my fabric there for a couple years And then I'll pull it off and just put mulch because these peonies will probably outlive me.

They're something that are gonna live a long time.

So I'll just put mulch in once I'm just letting basically letting that fabric act as like a tarp killing off any weeds and stuff like that.

And when you plant into the fabric, we talked about burning holes in 1 of the earlier classes.

These, you actually, it's best to cut the fabric, which is kind of a no-no, but you cut it in an X so it doesn't fray.

And that way, as the peonies grow, the root grows.

So you can just extend that hole a little bit as they grow and you're not trying to burn and you burn your plant or something like that.

So it's just an easy way to and they will push up through that.

You leave the flaps down and you just let them grow up through the through the X in the hole in the fabric.

They do take quite a bit of water to get established.

So make sure that you have Some kind of drip tape or you can also you could sprinkler irrigate them as well They don't have a lot of disease issues sometimes late fall mine will get some likes Body leaves that I'm sure is something but you cut it off and they don't seem to really, it hasn't bothered anything yet.

But the first season especially through mid-summer, late summer you want to make sure you're keeping them really well watered because that's when they're putting on new eyes for buds next year.

So the next thing I was going to talk about is disbudding which is something you hear a lot about if you're growing peonies.

They, The textbooks tell you I guess the first 3 years to dis bud pop off any buds that come up on your plants and that's Not to cut anything just pop the buds off that is I Don't see that We've talked about how I just go against the grain for everything, but I listen to a lecture from 1 of the He's up in Washington State And he grows peony plants and he was like your peony plants should pay for themselves in their first season He said is unless you're just cutting all of the foliage off or something there's plenty of foliage there for them to regenerate for the next season.

So I've cut and sold all every single bud stem that I can off my plants.

The only disbudding I do is the little side shoots.

So like these little buds on the side of this, I go through and pop those off because that'll give you a bigger bloom on that variety And it's just this Sarah Bernhardt is the variety that does that for me So that's totally up to you.

I don't like I said my plants are huge and I have not seen any I don't any reason to just to disbud then the first first 3 years you're supposed to technically pop off any but disbud everything for the first 3 years and let your plants get fully established.

But the reason you're doing that is to make sure that you're sending like everything back into the roots and not letting them bloom.

I when you're Cutting you cut them before they open or anything like that So like like I said, I listened to this lecture and he was like you're not cutting that much greenery They're gonna sit there all summer using all that foliage that's still there to produce Lots, and maybe I'm I'm shorting myself a few few blooms, but My plants I you can buy either 2 to 3 I Roots or 3 to 5 I roots wholesale.

I always get the 3 to 5 and usually the first year I get 2 or 3 buds off each plant which if you're selling them for 4 or 5 dollars each to your forest you've already covered your cost because it's they are an investment It's definitely something to consider.

So when you're harvesting, you want to cut them in the marshmallow stage, which just means that when you pinch that little bud, it feels like a marshmallow.

At least for us in the South, I go through and cut these multiple times a day.

And a bud that's like totally tight in the morning may be fully open in the evening.

So I go through it like morning noon and then in the evening a lot of times and That's what I was gonna have a little side note about that.

I run into some issues with like Sabbath and harvesting Some of them blow open and those are ones that I just put into bouquets.

I'll just sell them from our farm or whatever and people still love them.

You can't store them, but they're still beautiful.

So when I cut, even on my really established plants, I leave as much foliage as possible so that it has as much energy to put back into the roots.

You can store them in a cooler in water, just clean water for about a week if they're in this like a tight bud stage.

Some of these are a little bit more open.
