Disease Prevention and Management Through Balanced Nutrition

I like to do a little short devotional before we begin the thing.

And I just wanted to mention what was discussed last night in Mark 7 when the deaf man was brought to Jesus to lay hands on him.

And you remember Jesus put his hands in his ears and put spit on his tongue and then prayed be opened and the man was healed.

And a similar situation with a few verses later in Mark chapter 8 with a blind man, people brought him and asked Jesus to lay hands on him.

You know, it's interesting that in those days, spit or spittle was believed to have therapeutic property.

And Jesus always went with the belief system.

So we would probably talk about this today as the placebo effect that the people, man, the 2 men that we mentioned were believed that the spit was going to have an effect.

And of course, when you believe something, then there's more likelihood that it will happen.

The 2 things which I thought were interesting is that Jesus took the person away from the crowd and he dealt with them in private.

Jesus treated these people not as a clinical case, but as an individual, as a human being with need.

And I think the greatest thing that we can do, all of us as healthcare professionals, is to remember that in dealing with people that come to us, we are dealing with, we should be dealing with them as individuals, as human beings, as people who have need, not just as another clinical case.

And I say this to myself as a teacher, because every student in the classroom has to be treated as an individual and not just as an ID number in front of me.

Somehow we've forgotten the power and the beauty of touch.

I believe that massage and hydrotherapy owe some of their effectiveness to the fact that there's an intimacy, there's a touching of people.

And in great medical centers across the country, cancer centers are now realizing the value in massage, in helping people sleep better and reduce pain and anxiety.

It's not just medication, it's actually the touch, the massage that is being given.

So these things are good for us to remember during this special weekend to refocus, rethink about the people that come through.

We've been reminded that the theme of this weekend is how would Jesus run the office?

Well, 1 of the ways he would run the office is that he would treat everybody as individuals, not as clinical cases.

And he would not be afraid to touch, in the inappropriate way of course.

There's nothing more impersonal but going to an office and the doctor's eyes don't even cross yours and he's busy on a computer writing something and you leave, you know.

That friendship that has developed is something that's very important.

So as we begin, let's have a word of prayer.

Father in heaven, we thank you for this beautiful day.

We thank you for this conference where we can come and refocus.

And we thank you for the example of Jesus in the way he treated everybody as individuals with need and not just as another clinical case.

This afternoon we pray in Jesus' name, amen.

So I wanna talk to you this afternoon about a subject that's very exciting to me.

It's very heavy in chemistry, but we're not going to dig deep into all the biochemistry.

We're gonna try to show you the big picture and some of its review and some of its new material.

The first thing we want to mention is that there's over 25, 000 phytochemicals and to get them all you're going to have to have a varied diet.

You're going to need to eat fruits and vegetables, whole grains, herbs, nuts, seeds.

And We know a number of the phytochemicals.

Some of the more research ones are listed here.

And we will talk about some of these along the way.

If you read magazines, you'll be familiar with some of these names like crotinoids and indoles and isoflavones.

But what I want to focus on is the examples of where the richest concentrations of these things are found.

And if you look over here, you'll notice that there are spices, There are herbs, there are seeds, nuts, fruits, vegetables, beans, there's a whole variety of things.

And so 1 needs, if you, and these function in the body in different ways.

They exert themselves on different metabolic pathways in many different fashions.

We know of at least 15 or 20 pathways where a phytochemical could help protect against cancer.

And so some of them are utilised in some pathways, others are utilised in other pathways, so clearly variety is very important.

Unfortunately, in the Western typical American diet, we don't get too much phytochemicals because fruit and vegetable consumption is limited.

Junk food high in sugar is partaken and people are eating far too much animal protein rather than beans and tofu.

And all of the things that I've just mentioned that they should be eating, have the phytochemicals and the way that they're eating, typical sort of McDonald's fries, burger, Coke meal has very, very little in the way of phytochemicals.

The Italian researchers showed that green vegetables reduce your risk of cancer.

And so as you go from a low intake to a medium intake to a high intake, you can get a greater reduction or a greater protection of many different, I've just listed some of them here and we don't wanna focus too much on the numbers, but it's clear that the numbers increase from left to right which means the more you eat, the better the protection.

Okay, there's obviously self-limiting in terms of how far more can go, but certainly more than what the typical American is eating.

The other thing about phytochemicals is that they do experience synergy and so you want to eat not your lutein from a bottle but rather from peas or spinach or whatever.

You don't want to eat your lycopene from a bottle, from a pill, but rather from watermelon, from tomatoes, etc.

Because the research literature shows us, at least in the case I'm presenting here, the phytochemicals, the indoles and thiosinates in the broccoli and the lycopene in the tomato, they're synergistic in their effect.

So the idea is we should be eating foods as near as possible in their natural state.

In other words, whole foods are very desirable.

These are just a couple of examples you may have seen.

When you blanch walnuts and get rid of the thin brown skin, you lose about 96% of the elagic acid in the walnuts.

Fluoridzin, which is a flavonoid in apples, you'll see it's much higher in the peel.

So if you're peeling any of the fruits, except of course pineapple and banana and those things which you don't want to necessarily be eating the skin, you're going to be losing a lot of the protection.

Again the olive oil, some people like to buy pure olive oil, it's anything but pure, It's been highly refined.

Extra virgin contains many phytochemicals.

Some of the ones that are known that are listed here, tyrosol, hydroxy tyrosol, oleuropein and so on.

These are all known to have strong biological activity that protect against cardiovascular disease or cancer and there's many many papers that illustrate this.

People often ask well do these things get destroyed by usual cooking?

In general stir-frying, microwaving doesn't have too much an effect.

Mostly they're fat soluble, but boiling in lots of water and chopping them in small pieces, often there is significant loss.

Now You've heard about the value of walnuts and almonds and broccoli and cabbage and tomatoes and soy beans and olive oil and garlic.

So I'm not gonna go over all that because that's old stuff.

And you didn't come here today to learn old stuff, although it doesn't hurt to be refreshed and to be consolidated in the way that you're eating.

But I just wanna share with you some other things to add to these.

The phytochemistry of all of these is partly known.

The variety of compounds, and they certainly promote our health.

So when you eat fruits and vegetables and grains and beans for your vitamins and minerals, Just remember there are thousands of other chemicals that are there, which we may not even know the names of, but which are providing health-promoting properties.

So the first 1 I want to mention is whole grains.

Research has been coming out over the last few years, but this is 1 of the earliest studies from Boston, from Harvard, where 40, 000 nurses are being followed.

And the data that they publish is that heart disease is reduced significantly, stroke and type 2 diabetes.

Now, who would ever have thought that diabetes could be, the risk of it could be reduced by making sure that your bread roll was whole wheat.

And whole grains have a fairly unique polyphenolic called ferulic acid, it's very high in the whole grains.

But recently they've shown in an article in Cereal Foods that many of the phytochemicals that are in fruits and vegetables are also found in whole grains.

So all that data bank that you have stored back here about all the value of fruits and vegetables just add to that whole grains also contain many of those phytochemicals.

Ferulic acid, the value, parts per million in whole wheat and here is in white flour.

You can see it's pretty well depleted, not entirely, but significant loss.

Recently, rice bran was also shown to contain quite a significant level of ferulic acid, which induces regression of colon cancer cells and also stimulates apoptosis, which you know is the programmed death of cancer cells.

So the bran tends to be where most of these polyphenolics are found.

So in any way of removing the bran is going to cause the loss.

Also Harvard published this study, which showed in the Physicians Health Study with 20 years of follow-up, 2 to 6 servings per day of whole grains was associated with 21% reduction in heart failure compared to those who didn't eat whole grains at all.

We need to stress and emphasize to our clients and patients that we need to try to encourage a greater use.

In Ellen White's book, Confrontation, which has been since renamed Victory Through Christ, Jesus overcame the 3 temptations from Satan in the wilderness, the first 1 being appetite, about which we'll be speaking today.

Mankind first fell into sin on the point of appetite and yet some people say appetite is not a salvational issue.

On page 51 of this book we read, All was lost when Adam yielded to the power of appetite.

The Redeemer, in whom both the human and the divine were united, stood in Adam's place and endured a terrible fast of nearly 6 weeks.

The length of this fast is the strongest evidence of the great sinfulness of debased appetite and the power it has upon the human family." That's from page 51.

And on the next page, Satan approached Christ with temptation upon appetite.

He had overcome Adam upon this point, And Satan had controlled Adam's descendants, and through indulgence of appetite had led them to provoke God by iniquity, until their crimes were so great that the Lord destroyed them from off the face of the earth by the waters of the flood." Because the subject of life without meat, dairy, or oil is so confrontational, I invite you to pray with me that we may be empowered by the Holy Spirit to believe scientific truths such as how oil hijacks our taste buds, so that together we can learn to choose palatability over mere deliciousness.

Heavenly Father, We are gathered here to plead for the outpouring of your Holy Spirit in latter rain power.

We cannot keep your health laws without your power, dear God.

We cannot even believe the scientific truths about high-fat foods hurting our health unless you enlighten our minds with truth and set us free from our addictions.

Please, Lord, hide me behind the cross of your precious son Jesus, in whose name we come to you today.

What do you think is the most destructive addiction facing Americans today?

The largest, most destructive epidemic of addiction in the U.S.

Is not caused by tobacco, drugs, or alcohol, although that is part of the health message.

It is the epidemic of our addiction to high-fat foods, to unhealthy foods.

Animal protein in the diet, high-fat content.

We're going to talk today about the evidence that shows that a diet with 20% or less of calories from fat can be very health protective and health relieving.

And some people with really severe genetic strikes against them, they need to get their fat content down to 10%.

Tell me, when the children of Israel were going 40 years through the wilderness, why would the Lord feed them manna, manna, manna, breakfast, lunch and dinner for 40 years in the wilderness?

He could have given them a seven-course meal for breakfast, lunch, and dinner for the whole 40 years.

They never had to eat the same thing twice.

Why was it manna waffles and manna burgers and manna bagels for 40 years in the wilderness?

Was the Lord trying to teach them something about appetite?

Was the Lord trying to teach them that food is to be life support and He was to be their deliciousness?

Was the Lord trying to teach them that He was to be the desire of their hearts?

Was that what He was trying to tell them with manna, manna, manna?

It makes beans, green squash, and yams sound positively like a feast, doesn't it?

What do you think, tell me, what do you think is the most common cause of disability for young African American males in this country, age 25 to 40, What do you think would be the most common cause of disability in the US?

Could stroke be the most common factor for disability, not death, disability in African American males age 20 to 45?

REGARDS stands for Regional and Geographic, no, Reasons for Geographic and Racial differences in stroke.

The REGARDS study talks about the Southern diet.

The Southern diet is high in fried foods and meats and sugar-sweetened drinks and refined flours.

And it downplays the importance of fruit, salads, vegetables, legumes.

And the REGARDS trial is no slouch of a trial.

I'm sorry, I don't have the exact number memorized, 30, 000 people, black and white Americans, over the age of 45, and it found that the Southern diet increased stroke risk by, what do you think, how much?

In contrast, the low-fat plant-based diet reduced stroke risk by 20%.

But I'm speaking to the people at Amen, and you know that.

We're gathered here because you want to share with your neighbors, with your friends and relatives, your co-workers, or if you're a physician or healthcare provider, your patients, you want to share with them the beautiful truths that we have been given in the health message.

How can we learn these scientific truths in such a way that we can present them in such a way that will draw people to the giver of all good gifts, our Father, so that we can help them to celebrate every pound lost and every addiction overcome as a gift from the Heavenly Father.

You can teach them to the youth in your church.

You can invite people to Forks Over Knives parties.

That's a secular movie, But it's got a real message.

You can cook a bunch of wonderful plant-based, oil-free food like Forks Over Knives advocates, and you can invite friends and neighbors and start a discussion.

Or not, but I think that there'll be discussion after that movie, and feed them delicious food.

You can teach the youth in your church to do this for their friends.

We can reach others for the Savior with this message.

Is anyone else in the world trying to reach others with a message of health?

Why do they spend thousands of dollars per employee who comes to the Engine 2 Diet Immersion?

Why do they spend thousands of diet dollars to let them spend a week with us learning how to eat a diet without meat, dairy, and oil.

We're not exercising them 8 hours a day like on Biggest Loser.

There's an hour of optional exercise, but it's voluntary.

I am so fortunate to have been asked to be the medical director for 7 of his first immersions, where twice a year in the spring and fall, we take the sickest employees of Whole Foods, those with the highest cholesterols, the most cancer, the most weight to lose, the highest blood pressures, we take them to a beautiful resort north of Austin, 1 time to Hawaii.

We take them to a setting where we're lecturing to them and feeding them buffet meals, all you can eat, seconds, thirds, there's no food police saying that they can't have all that they want to eat.

And they're eating lots and they're loving the food.

We're doing food demonstrations and showing them how to prepare this food.

And my job, I have an exciting job there.

My job is to take them off their blood pressure medication before their blood pressures fall too low, because that's the power of the plant-based diet, as you well know.

And my job is to cut those insulin doses 20% per day, so that they don't bottom out with their blood sugar levels.

And my staff draws the blood on Monday and Friday.

I'm using a hypothetical week just to give you a picture that we're there about 6 and a half days.

Partnering the Practice and Church for Explosive Church Growth

This is the session that deals with partnering the practice with the church for explosive growth.

Our Father and our God, we thank you so much for your goodness.

Thank you that we can share in your work.

Thank you that you have called us to be agents of change.

The talk this afternoon will have 3 primary aspects of the agenda.

1, making an argument for uniting medicine and faith, medical and the church community, as well as wellness and evangelism.

The second aspect, Amen asked me to tell what I'm doing.

And thirdly, I would like to invite you to be part of the process.

And I must tell you that I have 2 financial disclosures.

I have a financial interest in Renew Medical Center and Lifestyle Institute, as well as ePreventionRx.

We could divide this presentation in 6 different aspects or parts.

1, we want to describe to you the current state of affairs within the church, within the health care industry.

I would like to illustrate the cry of the human soul.

Spend more time in depth outlining Christ's method.

Then show the role that you can play to help the explosive growth within the church.

And hopefully I will have time for questions.

Let me start right at the beginning with the genius for this concept that I will be introducing to you.

Jesus Christ outlined 2 very clear paths, 2 opposing forces.

In John 10 and verse 10, Christ made it very clear that the thief is only there to steal, kill and destroy.

He said, I came so that they can have life, real and eternal life, more and better life than they ever dreamt of.

Everything we do, every job that we attempt, you will find these 2 opposing forces.

Acts 1 and verse 8, it states, but you shall receive power when the Holy Spirit has come upon you.

And you shall be witnesses to me in Jerusalem, locally, and in all Judea and Samaria, and to the end of the earth." He wants us to think globally.

This it is very important that you do not take a parochial approach to what we're doing.

But most important to get from this is that we have the power to make this happen.

And then Christ signs, gives us a contract where he says in Exodus 34 verses 10 and 11, Behold, I make a covenant, a contract with you before all your people.

People are going to look at us and they're going to marvel at our achievement.

I will do marvels such as have not been done in all the earth, nor in any nation.

And all the people among you, among whom you are, shall see the work of the Lord for it is an awesome thing that I will do with you But there is a condition to this contract.

There is something that you have to do to fulfill this contract.

So throughout this talk today, we're going to be looking at his method so that we can claim this contract, we can hold on to this power, understanding that there are 2 forces, and we are guaranteed success.

So let's start by looking at the current state of affair in the Church.

Over the last 20 years, every mainline Protestant church has shown decline.

Top of the list is the Presbyterian Church with a 24% reduction.

For example, in 1995 alone, they lost 100, 000 members in 1 year.

The Episcopal is right behind them at 20 percent.

And there's a small group of churches that are showing either staying the same or showing some growth, but that growth is less than 2, 2.5%.

And if we looked at the Seventh-day Adventist Church, the Baptist Church, there's a reality check that is not very pleasant.

80 percent of our churches are either stagnant or die.
